We are in the middle of a move, and I have not had much time to really get my ducks in order. I am still cooking as much as I can, and decided to finally make some cauliflower rice. I had seen it in Trader Joe’s, but I thought, nah, I ain’t buying that, It seems rather easy to make. I found a recipe from Minimalist baker and added some extra ingredients to make it my own.

  •  Healthy alternative to grains and legumes- Cauliflower has loss carbs than rice, and helps increase your vegetable intake.

Making cauliflower rice is super easy, and with so many benefits, it’s great to use this rather than brown rice in your recipes.

You can save this rice (uncooked) for a month in your freezer, or longer. It’s a cheaper than buying it from Trader Joe’s, or anywhere else really. Extra points if you grew your own of course.
